The reason they are called eggplants is that the original breed of them that came from China were solid white and were smaller and more round than the modern purple aubergine. If you google white eggplant you'll see some of them. They really do look like eggs. Selective breeding that prized a slightly different breed's beautiful purple streaking patterns eventually created the ones you know as eggplant today.
