It's most likely because it's just picking up hints of the color depending on where he is. Cause in the opening credits where he's outside on the island, standing in front of a crashing wave, it has a hint of blue. And then somewhere else, it picks up hints of purple.

His hair is made of magic.

Riku's hair is like my living room walls. During the day time, they have a hint of pink in them when the red front door is open, because the sun hits the red front door, causing the white walls to have a slight hint of pink. During the night time, they're just white walls.
