I'm not that into potatoes but sweet potatoes are okay. I'd just rather get my calories from protein or fat, or better vegetables like squash.

Yeah, pumpkin is a winter squash which are the types I prefer. Such as butternut, kabocha, acorn, spaghetti, and delicata. There are other good ones, but they seem harder to find.

Do you use the courgettes term instead of zucchini? Yellow zucchini and yellow squash are good roasted.

Oh, now I have a butternut squash craving. I think I tried some last year with red onion and thyme. It was very flavorful like that.

Zucchini I eat with eggs.

I generally dislike potato, even the sweet kind.

I like mashed potatoes fine, but I need a lot of gravy. Baked potatoes are too dry for me, but I guess I should have used butter to fix that.

My parents like both sweet potatoes and squash.

But they also like eggplant, so I question their judgement.

Spaghetti squash gets its name because of how stringy it is.

I like eggplant as long as enough moisture has been removed.

Maybe that’s the problem with our eggplant. It gets cooked until it’s really moist and soft and unappetizing.

I’ve never actually had appetizing eggplant, though.

It's pretty good roasted. Keeps it from absorbing too much moisture and brings out some of the sweetness.

You might like moussaka, mdom. It has variations with potato and eggplant and is somewhat similar to lasagna.

Baba ghanoush is also good, has eggplant. Steamed eggplant sounds like it wouldn't be ideal, considering how absorbant it is. Unless it was being mixed with other things.

It had some kind of Chinese sauce as well. I hated the texture.

It felt softer than we make our zucchini. The eggplant really looked like a mess, though.
