Only really bad beekeepers take so much honey that the bees die. Not to mention if you kill off your hive by over harvesting, you're losing out on harvesting the next year... so that's just stupid. All of the beekeepers I have talked to (and it's actually a lot cuz I'm in some weird facebook groups) would rather not harvest at all that year than risk losing their hives over the winter.

Now a large corporate operation, yeah that seems more likely that they would do that... but that's why you should buy locally harvested honey from small apiaries if your financial situation allows it.
