Do you have the Dragonrend shout? It makes dragonslaying pretty simple. Just hit 'em with the shout, wait for them to land, then start hacking away.
I'm pretty sure you can get another Housecarl if you go do quests for one of the Thanes of the other Holds. i haven't tried yet, though.
