We're all mad here.
Yup, and most of the meat is in the breast but we found some good ways. I usually just cut the breast off the carcass and cook those. I drain the fat off twice from the frying pan before putting it in the oven to finish. Takes care of the extra fat. Cooking a whole duck one method is to puncture the skin over the breast and cook the bird breast side down above a pan so it doesn't get soaked in fat and stays crispy.
To my knowledge, goat's milk is maltose based, like human milk. Cow milk is lactose based and needs to be converted by enzymes in the body so it can be used. People who are lactose intolerant lack the enzymes needed to convert lactose into a usable sugar, or so I've heard. Humans apparently were never meant to eat lactose sugars, but with cows milk we evolved to be able to tolerate it.
