We're all mad here.
My sister is a long time vegetarian, She would like to go vegan too but it doesn't make a lot of dietary sense for her at the moment. She always makes vegetarian though does cook meat for her fiance in a seperate pan. A lot of what she makes is really good and isn't special in anyway, it just lacks meat.

Savoury pies are good. We made chicken pies with piecrusts and canned veggies and potatoes as a standby that freeze well enough. She just puts in mushrooms instead of chicken, and a cream soup for the liquid. One popular thing also is peanut rice wraps: just plain rice, peanut sauce, lettuce and peppers in a torrilla. That one's vegan too depending on what's in the peanut sauce.

Green beans in a peanut sauce are good, asparagus and squash (or pumpkin) rissottto (method of cooking rice so it's goopy). A lot of the pre-made veggo stuff we find isn't really worth the trouble unless you need something to pass as meat-like for stuff like tacos.
