For me, it's kind of a two-part question, those being actual Role Playing and then what it enjoy in terms of game mechanics.
For the first, I do really enjoy the Elder Scrolls for that exact aspect, that feeling of living in the secondary world. The more options, the better. I like being able to customize everything and do pretty much whatever I want. Restrictions on things tend to lessen the experience for me.
On the other hand, when it comes to gameplay I enjoy, I really like turn-based battle systems or grid-based strategy RPGs. I also like games with in-depth combo attacks. I like item synthesis, hunting for rare items, equipment upgrading and customizing...
In addition to that, I like character customization, too, with a class system and stat-allocation, skill trees or something similar. I like to tinker, basically.
Overall, though, probably the most important thing to me is a feeling of reward. I like games where if I play for a half-hour/hour I feel like I got something accomplished.

Between supposed brothers.
