Yeah, we have very few people who are willing to do the opening shift since it's so early. Yeah our lunch hour starts at 10:30 during the weekdays and 11 during the weekends. Our cooks just tell us when they are ready for lunch and we'll change the menu and start taking lunch orders. Isn't too hard as long as you have good communications. For the leftovers, we try to sell them during the switch between breakfast to lunch or we throw them away if we can't sell them.
