These ones are pretty simplistic. I just took the unused pages of an old sketchbook and folded them in half to use for the pages in my new books. You just put those together (one inside the other) in groups of usually 4-6 to make "signatures", which you then punch holes in along the fold of the papers. Usually people do 3 or 4 holes each at the top and bottom, but I tend to do evenly spaced ones along the entire spine and....well, there are actually a lot of tutorials that make a lot more sense than I'm making.
Basically my current one is just gonna habe the sketchbook pages in a boring brown chipboard cover with purple thread along the binding. I'm doing the coptic stitch, which seems to be the most common and allows the book to open fully flat, but there are other stitches as well.
