Mmm sweet pickled beets. We made a huge batch of that last year and with some of the leftover juice we pickled some eggs in it. They just tasted like eggs and beets. lol

I love eggs, but I need them to be fully cooked or I wont touch them. If the yolk is still even a little gummy I just..can't. I usually cook them over hard with a dash of lemon pepper. Or scrambled with just a bit of sea salt. mmmm ♥
