I also like 'em with some ground beef in them. My mom called that "fritata" because that was the name in the cookbook we found it in gave it. I haven't seen other fritata recipes like it, though.

Broccoli is great with eggs.
The difference for me between casserole and frittata is that I bake the casserole and make a frittata in a skillet. And I add a few different items into them.
BTW - I love seaweed salad!

That sounds wonderful! I've really been getting into Mexican food since our vacation in Arizona. Even spent a weekend curing and seasoning a molcajete. It mashes up the best guacamole and salsa. Yummy!
