Pffff. If you can count things that include egg whites, then divinity is totally my favorite egg food.

Well. Would have been, if I could still enjoy sweets like that.

Or hey, ice cream has eggs, right? Egg yolk, at least.

More seriously, I don't think I have a favorite egg dish, but I do like making eggs in many different ways. There's a sort of dessert I get as sushi places sometimes: quail yolk on tobiko. I make eggs for my ramen, sometimes, or mix eggs into rice. Make egg flower soup... also omelettes. I have many, many different recipes for omelettes. My wife likes a particular way I make scrambled eggs.

Years ago, I eschewed boiling eggs in favor of baking them. The results are much easier to control, as long as I'm using "extra large" chicken eggs. I don't get why people call them that. I grew up on a poultry farm, and those were certainly not the largest eggs we gathered. Breed does matter a lot, though. As much as you'd guess, and then some. Most polish chickens, for instance (named not for a country of origin, but the near pole shape of their heads, which results in their unique crowning plumage), tend to have smaller, longer eggs than more common breeds, whereas the australorps we raised had larger, rounder eggs. I am rambling. Sorry.

I can appreciate duck eggs for a creamier texture, and have developed methods for ensuring my egg dishes come out to the desired creaminess of my guests, although I prefer most dishes with firmer eggs.

But... favorite egg dish? I don't think I could have such a thing.
