If they do have even prolonged decomposition, it won't matter if skeletons continue to be animated or not, they'll be weakened enough from that and their own bumbling around to be taken care of easily. And if they do starve, that gives more than enough time for that to happen as well. 5-10 years will cover most possibilities, including the time to build up proper survival camps for the long term if there's no starvation or decomposition.
