I feel like young Manchego cheeses might work with some types of fishes. It's one of my favorites, both young and old.

is a sharp cheese? sharper tends to suit fish well

I wouldn't say it was sharp in the way cheddar can be. But it has a mild tanginess to it, and still quite flavorful and nutty in a way that would work fish.
