It's also still hot enough to melt butter. Cornbread is good very slightly soggy from being buttered.

XD. I don't make my cornbread sweet at all, either. Just corn, cheese, bit of salt, and the butter for flavours.

Nah. The stuff my mom made wasn't dry unless she made a mistake. She's Canadian, but she made it good enough to make my Dad happy with it.

I'm used to cornbread from a mix... I just slather it with butter.

I would always use a mix too. Came out pretty good and didn't dry out if it was eaten same day.

I wanna try making it from scratch someday. Cornbread, and polenta. I know how to make champurrado now...
